Our Territory

For millennia, Cervaro has been a territory dedicated to olive cultivation. The characteristic landscape of our lands has always been the vast olive groves, offering visitors glimpses of rare beauty.

Cervaro is located in the Province of Frosinone, nestled on Monte Aquilone, overlooking the Cassino Valley, dominated by the Abbey of Montecassino, a major religious, political, and intellectual hub of the Middle Ages, to which it is indissolubly linked for historical and cultural reasons. As early as the eighth century, Cervaro was under the hegemony of the **Terra Sancti Benedicti** (Land of Saint Benedict), the feudal dominion of the Abbey of Montecassino, which, at its peak, extended over 80,000 hectares.

Thanks to the unique characteristics of the region, the monoculture of olives has developed since time immemorial. Even the ancient Romans produced olive oil with excellent organoleptic qualities from a type of olive called “liciniana,” a tradition later perpetuated by Benedictine monks and abbots.

Indeed, the cold climate, the gravelly nature of Monte Aquilone, and the fortunate positioning of its slopes, which ensure prolonged sun exposure, have been the ingredients that, over the centuries, have perfected the ideal recipe for producing olive oil with unique characteristics.

Our goal today is to enhance and protect the millennial heritage of our community through a strategic choice to focus on production using modern and innovative techniques. This includes the study and improvement of the native cultivars that define our territory: Leccino and Moraiolo.
